I had a craving for chiles rellenos and a freezer full of last summer’s crop of Anaheim chiles…

Once again, I followed Rick Bayless’ recipe for Pork Stuffed Chiles In A Savory Tomato Sauce in Authentic Mexican and followed the method in the recipe for Chiles Rellenos from The Paupered Chef.

This time I made my own beef stock to use in the recipe.

Instead of whisking the egg whites by hand, I used an electric beater. The consistency of the batter seemed better and I was able to get better results (I need more practice whisking egg whites by hand!). Next time, I will try basting the tops of the rellenos with hot oil to set the batter before turning.

So very good.

270g (before cooking!) Coarsely ground, loosely packed beef grilled medium rare over hardwood charcoal with grilled red onion, fire roasted Anaheim chile, vintage cheddar cheese (aged 24 months), and tomato.

Anaheim Chile, Potato, and Corn Tacos

I picked a few Anaheim chiles from The Potted Kitchen Garden. I was thinking tacos…

I roasted the chiles over a flame until charred, then skinned, deseeded, and diced the chiles.

I cut the kernels off a fresh ear of sweet corn and roasted them in a pan.

I cubed two potatoes and boiled them until al dente in salted water with 2 fresh bay leaves, 2 whole garlic cloves, and 6 whole black peppercorns, then drained them and removed the peppercorns and bay leaves.

I made 8 small corn tortillas.

I heated a large cast iron pan over medium heat, added a good knob of butter, and softened a diced onion. I then added the potatoes to the pan and let them cook with the onions for a few minutes.

The diced chiles and roasted corn were added and I let them get happy with the potatoes and onions before I tasted for salt and pepper, then removed from the heat and mixed through a healthy tablespoon of crème fraîche.

The tacos were served with a chipotle crema and crumbled feta.

The Fire Roasted Anaheim chiles are from The Potted Kitchen Garden. Pork and chiles are a natural match.

To make a riff off Chile Verde, try adding Chile Verde sauce to the risotto after the first addition of stock.

I noticed a few Anaheim chiles were ready to pick in The Potted Kitchen Garden.

Time to make chiles rellenos!

I spent some time perusing my cookbooks for inspiration and came across an enticing recipe for Pork Stuffed Chiles In A Savory Tomato Sauce in Authentic Mexican, by Rick Bayless.

I have made chiles rellenos before with a Picadillo sauce and my mouth was watering.

It had to be done.

As it turns out, there is a great food blogger that enjoys the recipe as much as I do. The recipe for Chiles Rellenos at The Paupered Chef follows Rick Bayless’ recipe fairly close and has heaps of great photos.

I have enough Picadillo and savory tomato sauce for more rellenos and there are plenty of Anaheim chiles getting happy in The Potted Kitchen Garden…
