I generally followed Martha Stewart’s Chicken Soup Recipe. I poached the chicken in a good, home made chicken stock instead of water for more chicken deliciousness and added celery.
I made beef stock yesterday for Chiles Rellenos and there was stock left over. Broth makes me think of soup, so for dinner tonight I made a soup with semolina dumplings.
For the dumplings, I followed Lidia Bastianich’s recipe for Semolina Gnocchi in Mixed Broth and used my home made beef broth instead of chicken broth.
